This is a rustic light meal or side dish to a pasta dinner. It packs a load of flavor into an easy to eat delight.



Combine water, yeast and malt extract in a mixing bowl. Beat until frothy, about one minute. Cover with a damp towel and let stand for thirty minutes.

Add the flour, salt, herbs and spices, oil and mix until the dough forms a ball and pulls away from the sides of the mixing bowl. It may be necessary to add more flour or water in order to get the dough to form. Once a single sticky dough mass is made, cover it with a light coating of olive oil and place it into a clean and oiled bowl and cover to rise for one hour or until it doubles in size.

While the dough rises, sauté one or two Italian sausage links, without the casings with chopped red peppers and thinly sliced onions. Cook the sausage until it is about half-way done. In a small bowl, mix two tablespoons of olive oil with one or two cloves of finely minced garlic and one teaspoon of dried Italian herbs.

Coat a half sized baking sheet with olive oil and spread the dough so that it evenly fills the pan. Cover and let the dough relax for ten minutes.

Use your fingers to put indented impressions all over the dough. Use a pastry brush to cover the dough with the garlic and herb oil. Fill the dents in the dough with the cooled sausage topping. Let the dough rise for thirty to forty-five minutes before baking in a 400 degree oven for 12 to 15 minutes.
