   Plain Malt Extract is simply the results of the mashing and sparging process with most of the water removed.  Extract syrups contain about 15% water and remain fresh for 18 to 24 months.  Dry malt extract, sometimes called DME, contain less than 3% moisture and can be properly stored for up to 4 years.
   Plain extracts are available in four basic colors.  Extra light, light, amber and dark.  As we have learned, the color of the extract comes from the grain bill.  When selecting a malt extract there are some basic rules.  They are origin, color and fermentability.

COOPERS CARBONATION DROPS $4.50
Designed to make bottling a breeze for all levels of homebrewers.  To carbonate home brew simply add one drop to each 12 or 16 oz. bottle (2 drops if using 22 oz bottles) prior to filling.  Fill bottle to within 1-2" of the top and cap as normal.  Store at fermentation temperature and your beer will be fully carbonated within 5 days.  When making diet root beer or hard ciders use 2 drops per 12 or 16 oz. bottles and 3 drops for 22 oz. bottles.  Package contains 60 tablets.

Adjunct is the term which describes any ingredient used in brewing beer that is not water, barley, hops or yeast.  Most adjuncts are sugars used to enhance a beers flavor and/or alcohol content.

Candi syrup is a by-product of the candi sugar making process.  White beet sugar is boiled, concentrated and then cooled.  While cooling, rock sugar is formed.  What's left is candi syrup which is essential for brewing strong, dark Belgian beers.  Provides more color and caramel flavor than dark candi rock sugar.
