The use of a baking or pizza stone is highly recommended for
the oven baked loaves. It helps produce an evenly baked loaf and
a nicely browned crust without burning. Another helpful tool to have
is a spray bottle of water to mimic the conditions of a steam injected
oven so as to create a thick, crunchy crust on the French baguettes and
the Deli Rye bread.
