Canning and Pickling Supplies

Canning your fresh produce is a great alternative to freezing it.  When performed properly, it can preserve the integrity and provide shelf stable storage for your fruits and vegetables for months.

Since the purpose of canning food is prolonged storage of fresh fruits and vegetables at room temperature, all harmful bacteria need to be destroyed and enzymes deactivated.  This is done with heat and with the proper canning jars and lids to create a hermetically sealed product that protects its contents from contamination. 

It is crucial to know what method to use for your particular fruit or vegetable in order to stay safe.  Depending on the acidity or pH of your produce, you will use either the boiling water bath method or pressure canning method.  Fruits and vegetables with a pH below 4.6 such as most fruits and pickles are considered high acid and may be canned using the boiling water bath method.  Those above 4.6 such as most vegetables and some tomatoes are low acid and must be pressure canned in order to destroy the bacteria Clostridium botulinum which thrives in the conditions of a canned, low acid food.
