Cheese Wax for Homemade Aged Cheese

Cheese wax is designed with the special qualities needed by cheesemakers. It melts at relatively low temperature so it will not cook the cheese as it is applied. Melted wax is easily applied to the cheese by dipping. Bubbles or gaps on the surface of a waxed cheese can be painted over with a small food grade brush. The thin layers of hot wax on the cheese sets (hardens) quickly (seconds not minutes) at room temperature. The wax remains pliable at moderately cool temperatures allowing the cheese a fair amount of flexibility to expand and contract without breaking the seal. Finally, cheese wax is as easy to cut through as the cheese itself.
