Tools for Measuring and Testing the Cheese Making Process

In taking inventory of your kitchen utensils measure everything against your cheese pot. You must be able to reach the bottom of the kettle without getting your hand into the liquid. If you can avoid getting wet while placing the utensil crosswise in the kettle (bottom left to upper right), all the better. Anything else is going to be too small. Whenever possible, avoid utensils with wooden handles unless you can totally prevent the wood from coming into contact with the milk or curd. This will rule out all wooden spoons. A few extra dollars spent in this area will pay you back many times over. Remember to shop for the right size, not the super size.
