Homemade Mozzarella Cheese Kit
Mozzarella was first made in Italy from the milk of water buffalos. Because it was not made from pasteurized milk and there was little or no refrigeration, the cheese had a very short shelf-life and rarely left the southern region of Italy where it was made. As refrigeration and transportation was later developed, it expanded through Italy and abroad. Today, fresh mozzarella can be made with either pasteurized or non-pasteurized cow, goat or buffalo milk.
