
Used for surface ripened cheeses like Brick, Limburger and Muenster. There are two modes of application; spray application: add a very small amount (approximately 1/16 teaspoon) to a spray bottle solution of (8 oz. distilled water, 1/8 teaspoon flaked salt and 1/8 teaspoon white sugar). Allow the solution to activate in the refrigerator for 16 hours prior to use. Direct inoculation: add a very small amount (approximately 1/16 teaspoon) directly to the milk when the primary starter culture is added.
