
This DCI culture for making buttermilk contains various strains and combinations of Lactococcus lactis subsp. Lactis, Lactococcus lactis subsp. Cremoris, Lactococcus lactis biovar diacetylactis and Leuconostoc mesenteroides subsp. Cremoris. Recommended approximate usage: 1/16 tsp per quart of milk; 1/8 tsp for 4 or LESS gallons and ¼ tsp for 4 or MORE gallons.
