This starter culture is a blend of freeze-dried lactic acid bacteria specifically for making dairy-free yogurt from soy or rice milk. The starter imparts a smooth texture and mild yogurt flavor and slightly light viscosity. The bulk package of this non-dairy yogurt culture will set up to 50 gallons of soy milk. Instructions: Heat one or two quarts of non-dairy soy or rice milk to 108°F. Add ¼ teaspoon of culture per one or two quarts of milk. Cover and allow to incubate for 6 to 8 hours or until the mix has formed a smooth, creamy texture. Cool immediately to below 70°F by placing the fermentation vessel into an ice water bath. Refrigerate overnight, mix in any desirable fruit or flavoring and enjoy.
