The hydrometer is used to determine the amount of fermentable sugar available in your sweet cider. This cider measurement is known as the specific gravity. The first reading you take, prior to adding yeast, is called the original gravity. The last reading, taken prior to packaging, is referred to as the final gravity. These two values can be used to calculate the alcohol content of the finished drink.
