When the vinegar is ready to bottle, sanitize the bottles and caps by carefully placing them in boiling water for one minute; remove and allow them to air dry.
The vinegar will most likely contain solids that you may or may not want in the bottles. If you want to strain the vinegar before pasteurizing, pour through the cheesecloth into the pot. Pasteurize the vinegar by heating to 150°F and hold it at this temperature for 30 minutes. Keep the pot covered and do not heat much higher than 150°F so you don't lose any of the acetic acid to evaporation. Pour the pasteurized vinegar into the sanitized bottles, cap and store at room temperature.
