Styles: Estate Series Lodi Ranch Cabernet Sauvignon
Aging:
This wine will begin to show its purity of fruit after six months, and
ageing for 18 months to two years will release it deeper flavours of cedar,
minerals and a lingering finish that transforms to blackcurrants.
Appellation:
Yeager’s Vineyard, Alexander Valley AVA, Sonoma, California, USA
Style: The principal
grape in Bordeaux wines, Cabernet Sauvignon is grown in most of the world’s
wine regions although it requires a long growing season to ripen properly
and gives low yields. The thick skin of the Cabernet Sauvignon grape results
in wines high in tannin providing both structure and ageability.
Description: Bright
wild blackberry and cherry are complemented with abundant spice. Black
pepper, vanilla, a hint of cedar, smoke and a characteristic note of cassis
(blackcurrant) along with other red berry notes evolve over time to show
a hint of dry chocolate on the finish. Finely knit together with
a silky mid-palate, this wine has a rich tannic backbone for aging.

CASTELLINA™
SUPERTUSCAN Di SIENA $189.95

Conditions: pH 3.6, Brix 21.6, TA 5.5 g/l
Oak:

Alcohol:
12.5-13%
Sweetness:

Similar
Styles: Chianti, Barolo, Montepulciano
Aging:
Like
the tradition breaking superwines of Tuscany, Castellina Supertuscan di
Siena is tempting to drink while very young, but the grip and length of
the tannins will only subside after 12 months. The ripe cherry and black
currant characters will continue to mellow and integrate with the spicy
oak over time with good cellaring.
(kass-TELL-ee-nah

Appellation:
Siena, Tuscany, Italy
Style: In the 1970’s
Winemakers in Tuscany broke with traditions of Chianti making to create
undeniably great wines, the Supertuscans. They concentrated on a single
Italian grape (Sangiovese) instead of the usual number of red and whites
that go into traditional Chianti, and blended it with Cabernet Sauvignon
and Merlot, for a uniquely Italian wine with both well finessed tannins
and supple fruit. Ironically, although Supertuscan wines are famous (and
expensive) because they are made outside the traditional Italian classification,
they are sold only as humble ‘vino di tavola’ (table wine)!
Description: This
wine is a dark cherry color with highlights of pretty, ruby garnet. Bold,
yet supple and expansive enough to be consumed with great pleasure, the
big, smoky, earthy nose of ultra-ripe cherry and currant fruit is followed
by a richly tannic finish.
The bright cherry
and lively fruit of Sangiovese matches brilliantly with the firm structure
of classic Cabernet Sauvignon and the dark fruit of Merlot. Named for a
hillside Tuscan village, our Castellina™
Supertuscan is an immediately appealing red that gets better with age.
Food Pairings:
Rack of lamb with herbs, Tuscan style meat dishes with tomato
sauces, Stroganoff or meat
grilled rare.

Similar
Styles: Valpolicella, Luna Rossa
Aging:
While
tempting to drink young immediately on bottling, Corvina Classico will
only reveal its delicate (yet powerful!) finish of cherry and almonds after
a year, and those with the willpower to tuck a few bottles away will be
rewarded by a decade of liquid velvet and bright, lingering fruitiness.
Appellation:
Cantina Sociale di Illasi, Verona, Veneto, Italy
Style: The power
grape of Italy's famed Valpolicella, Bardolino and Amarone, Corvina is
renowned for fruity, full-bodied wines with cherry aromas and a hint of
almond. The Veneto region stretches from the northeast border with Austria
down to coastal Venice, with a mild climate ideal for long, controlled
ripening and intense grapes.
Description: Corvina
Classico has lush, intriguing aromas of ripe red cherries and raspberries,
delicate hints of almond, toast and spice and a richly tannic finish that
has the fruit lingering on your palate.
In the historic footsteps
of Amarone, a wine fermented with a reserve of crushed grape skins -- the
Crushendo™ grape pack brings immense grape tannin and character to the
wine, and the special RC 212 yeast enhances the wonderful cherry fruitiness.
Food Pairings:
Grilled beef and pork, strong dry cheeses (Parmigiano Reggiano or Asiago),
pasta with meat tomato sauces, antipasto, veal or roast pork. The gripping
tannin in this wine also makes it a natural for red meat and game, and
the fruit lifts up herbed or spiced dishes.
Aging:
With
gripping tannins and up-front fruitiness, it will be tempting to drink
this wine young. However, after a year in the bottle, the floral character
of the Viognier will blossom alongside the Mourvèdre’s mellowed
tannins. Aging two or even three years will bring extended rewards.
Appellation: Languedoc-Roussillon,
France
Style: (Monh-tanh-yak)
Languedoc-Roussillon (lang-dock roo-see-onh) is one of the oldest and largest
wine growing regions of France. Running from the sun-drenched shores of
the Mediterranean to the border of Spain and the Pyrenees mountains, it
has a wine making history reaching back centuries. The combination of a
perfect Mediterranean climate and rich soil explains why Languedoc-Roussillon
is one of the most successful wine regions in France.
Description: Named
for Occitan, (oh-kit-onh) the language of ancient troubadours, this wine
is a special blend of the renowned grape varieties traditional to the region:
Mourvèdre, Carignane, Syrah, Cabernet Sauvignon and Viognier.
Vieux Chateau
d’Oc is a bold wine, ruby red with a deep, dark plum and blackberry bouquet
showing subtle accents of chocolate. Rich, lush and complex, soft black
fruit combines with a hint of spiciness that follows through with a firm,
tannic finish on the palate.
Food Pairings:
Leg of lamb, braised short ribs, peppered steak, duck/goose liver paté,
ripe cheese with walnuts.
