Testing the Specific Gravity
The hydrometer is used to measure the amount of sugar in your beer wort or wine must.  This measurement is called the specific gravity.  The first reading you take (prior to adding yeast) is the original gravity.  Our last reading (prior to packaging) is the final gravity.  These two numbers are used to calculate the alcohol content of the beverage.  For details of the calculation see Calculating Alcohol Content.
