Priming sugar is corn sugar. It is used at bottling time to feed the yeast and carbonate the beer. A 5 oz. packet of priming sugar equals about 1 cup and will prime five gallons of beer. The priming sugar must be prepared prior to use. Combine two cups of water with the priming sugar and boil the mixture for one minute. At the end of the boil, cover the pan let it cool while you prepare your bottling equipment. The cooled syrup is then added to the bottling bucket prior to racking.
