
Briess Special Roast is specially processed malt. It’s made with 6-row barley and is similar to Victory Malt, only revved up a bit. Use special roast in non-straw colored beer such as porters and nut brown ales, smaller portions (4-6 oz) are also good in Vienna lagers, Marzens and alt beer. It will provided a deep golden brown color and impart toasty and tangy with a biscuit/sourdough flavors. Available in whole and crushed, victory is a good substitute. Improperly stored malts are prone to loss of freshness and flavor. Whole kernel diastatic and preground malts are best when used within 6 months from date of manufacture. Whole kernel roasted malts may begin experiencing a slight flavor loss after 18 months.
