Citrus Habanero Hot Sauce
Yield 1 1/4 cups

2 teaspoons Habanero Mash or 2 fresh Habanero peppers, finely minced

1 cup frozen Orange Juice concentrate, thawed

1/4 cup fresh Lime Juice

1 teaspoon ground Ginger
-
1/2 teaspoon Curry powder
-
1/2 teaspoon Salt

Place all ingredients in a saucepan and bring to a simmer.

Hold at 180° F for 5 minutes.

Remove from heat and bottle as described under Bottling Hot Sauce.
