Roasted Three Pepper Hot Sauce
Yield 1 1/2 cups

2 Sweet Green Peppers (roasted)

1 Tablespoon Cayenne Pepper Mash or 3 fresh Cayenne Peppers

3 dried Guajillo Peppers

1/2 cup White Vinegar

2 Garlic Cloves ot 1/2 teaspoon of Garlic Powder

1 teaspoon Chipotle Powder

1/2 teaspoon Salt

Roast and peel peppers as described under Use Hot Peppers. Cut into 1-2 inch chunks.

Remove and discard stems and seeds from dried guajillos. Place peppers in skillet over high heat and toast for 1-2 minutes, just until they begin to give off their aroma. Remove from heat and add enough water to cover chilies. Soak for 15-20 minutes.

Place all ingredients into a food processor and puree until smooth.

Pour sauce into sauce pan and bring to simmer. Hold at 180°F for 5 minutes, remove from heat and bottle as described in Bottling Hot Sauce.
Chipotle Chilies are the smoked fruit known as jalapeƱo of Capsicum annum. These chili peppers are grown in northern and southern Mexico. Chipotle Pepper Powder is simply the dried whole Chipotle chili ground up into a fine powder. Chipotle has a distinctive, smoky, sweet, meaty flavor with a moderately high heat level. |
The guajillo [gwah-HEE-yoh] chili pepper is known technically as Capsicum annum, cultivar Guajillo. It is mainly grown in Mexico but has also been reported to grow in some areas of the southern USA. It has a moderate heat level and is mainly used in salsas, sauces, soups and stews. |
