Southwest Hot Sauce
Yield: 2 cups

1 Tablespoon Habanero Mash or 3 fresh Habanero peppers

2 Red Bell Peppers (roasted)

1 cup White Vinegar

2 Garlic Cloves or 1/2 teaspoon Garlic Powder

2 Tablespoons Ancho Pepper Powder
-
2 teaspoons Chipolte Pepper Powder

1 teaspoon ground Coriander
-
1 teaspoon Curry Powder

1/2 teaspoon ground Cumin

1 teaspoon Salt

Roast and peel red pepper as described under Use Hot Peppers. Cut into 1-2 inch chunks. (If using fresh Habaneros, use care when removing stems and seeds by wearing protective gloves and glasses)

Place all ingredients into a food processor and puree until smooth.

Pour sauce into a saucepan and bring to a simmer. Hold at 180° F for 5 minutes.

Remove from heat and bottle as described under Bottling Hot Sauce.
Ancho Chili Pepper is the dried, ground fruit known as poblano of Capsicum annum. Poblano peppers are grown in Mexico. Ancho has a mild paprika flavor, with sweet to moderate heat. |
Chipotle Chilies are the smoked fruit known as jalapeƱo of Capsicum annum. These chili peppers are grown in northern and southern Mexico. Chipotle Pepper Powder is simply the dried whole Chipotle chili ground up into a fine powder. Chipotle has a distinctive, smoky, sweet, meaty flavor with a moderately high heat level. |

Garlic is native to central Asia. Its use began to spread across the world more than 5000 years ago. Garlic granules can be used in marinades, or mixed with herbs and rubbed into poultry, pork, or beef before cooking. Unlike garlic powder that is very fine, garlic granules are coarser, flow evenly and are easier to measure. One quarter (1/4) teaspoon of granules equals one garlic clove. |
