Garlic Lovers Hot Sauce

Yield: 1 1/2 cups
  • 4 Tablespoons Cayenne Mash or 12 fresh Cayenne peppers

  • 2 teaspoons Garlic Powder 

  • 4 cloves fresh garlic, finely minced

  • 2 fresh Plum Tomatoes or a 6 ounce can of Tomato Juice

  • 1/2 cup White Vinegar 

  • 1 teaspoon Curry Powder 

  • 1 1/2 teaspoons Allspice 

  • 2 Tablespoons Sugar 

  • 1 teaspoon Salt  

  1. If using fresh tomatoes, place all ingredients in a blender and process until smooth.  If using juice, omit this step. 

  2. Place all ingredients into a saucepan, bring to a simmer and hold at 180° F for 5 minutes. 

  3. Remove from heat and bottle as described in Bottling Hot Sauce.

    *If using a dropper fitment on bottle you may need to strain fresh garlic from the sauce before bottling.

A blend of many herbs and spices and is used widely in savory dishes throughout India and Southeast Asia. There are many versions of curry but most contain the spice turmeric which gives it its deep yellow color. Curry loses its pungency quickly so store in a cool dry place for optimum flavor.

Garlic is native to central Asia. Its use began to spread across the world more than 5000 years ago. Garlic granules can be used in marinades, or mixed with herbs and rubbed into poultry, pork, or beef before cooking. Unlike garlic powder that is very fine, garlic granules are coarser, flow evenly and are easier to measure. One quarter (1/4) teaspoon of granules equals one garlic clove.
