Assemble equipment and 18 lbs
of granulated sugar. Use only plastic food grade items.
Sterilize all equipment with
a sterilizing solution such as One Step.
Mix 18 LB. of sugar into 3 gallons
of hot water until all sugar dissolves. Gradually add cold water to make
6 gallons.
Ensure the mixture temperature
is between 80-90°F. Pour the contents of the SuperYeast pouch into
the solution and stir for 1 minute.
Ferment between 70-80° for
8-10 days or until the Specific Gravity drops to below 0.990. For best
results keep the temperature constant. A consistent temperature is
critical in the fermentation process. Use a Brew
Belt if necessary. Do not allow the temperature to rise above
90°F otherwise fermentation will cease.

Clearing - Due to the special
yeast strain used, the mash will not clear naturally. To clear the mash,
one of two methods is recommended. The most effective means of clearing
is the addition of Isinglass Fining Agent.
The fermented mash may also be cleared using a wine filter such as the
Mini
Jet™ with sterile-grade wine filter pads.
Charcoal
Filter - To make homemade liqueurs or liquors, it is recommended to
use charcoal filter pads or activated carbon to remove any remaining unwanted
volatiles, purifying the taste of the finished liquor.
Flavor the finished alcohol
with your favorite liqueur or liquor extract. For best results use LIQUOR
QUIK™ brand, 100% natural essences. To make a quick party punch, add
the fermented mash directly into your favorite mixture of soda and/or fruit
juices.

This, easy-to-use, carbon purification
system is designed to remove unwanted odors and flavors from fermented
“alcohol-bases” such as the base made with High Alcohol SuperYeast™.
Those of you who have been hesitant to make the base used with Liquor Quik™
brand essences because of not having a carbon filter to clear it can now
do so with confidence. Manufactured of food-grade, ethanol resistant
plastic, the unit attaches to the spigot on a bottling bucket, comes with
an initial supply of carbon along with complete instructions for use.

Assemble
The CarbonSnake™ and attach to bottling
bucket as per the diagramt.
Cut one (1) double-sheet 1”
circle from the enclosed coffee filter paper. Save the remainder of the
filter paper for future use. Replacement paper is available at most grocery
and discount stores. Unscrew the swivel connector (male nipple) and place
this paper between the stainless/rubber washer (convex side) and the (female)
connector. Re-attach the (female) connector. It is very important to assemble
this correctly or the paper may rupture, causing the liquid to filter grey.
Avoid getting grains of carbon into the connector threads. This may cause
leakage or colour the liquid grey.
Slide the YDS key clamp over
the opened end of the hose assembly. Carefully open the 2 oz. (60 g) package
of GAC (enclosed) and gently fill the tube assembly to within 1” of the
top of the hose. A small funnel is useful for this purpose.
Prime the hose by filling the
hose with clean warm water. Securely attach the hose to the tap by hand
tightening the YDS clamp around the outside of the hose. Make sure the
hose does not slide off the tap.
Fill the pail with liquid to
be filtered. For best results, first clarify alco-base with Super-Kleer
K.C.™ or #3 sterile filter pads. The flow rate will depend on the clarification
of your liquid and the choice of GAC; the murkier the liquid or the finer/irregular
the GAC, the slower the flow. An average flow rate using the recommended
DARCO GAC is approx. 13 fl. oz. (400 ml) per hour. The slower the flow,
the purer the final product.
Place a food-grade receptacle
under the bottom of the hose. Turn on the tap. Remove any air bubbles trapped
in the top of the hose by pinching the hose. The purified liquid will begin
to drip out the male connector nipple within a few minutes. Taste the liquid
every gallon (4L) for purity. It should smell and taste like vodka. To
maintain the best purity, you may stop the flow after 3 U.S. gallons (12L),
and replace the used GAC with new GAC. If the liquid drips grey, the filter
paper may be punctured or inserted incorrectly.
Once the liquid is purified,
you may mix it with soda or juice to make a party punch, or flavor it with
liqueur/liquor extracts. For best results, we recommend 100% all natural
LIQUOR QUIK™ branded essences.
Clean your hose by loosening
the YDS key clamp and gently removing it from the lever tap. Unscrew the
male connector and remove the washer and filter paper. Flush warm tap water
through the hose until clean. Air dry.

that is more than 50% alc./vol.

DO NOT pack the carbon in the
hose; this can block or impede flow.

DO NOT use powdered carbon in
the hose; this can block or impede flow.

DO NOT use a non beverage-grade
carbon; this may add mineral salts or other unwanted byproducts to your
ethanol instead of removing them.

DO NOT re-use the spent GAC.
