
The pioppino mushroom is most popular in Italy. Also known as the black poplar mushroom and the chestnut mushroom. The velvet pioppino has wonderful dark brown circular caps on long cream-colored stems with beautiful rings on the stems that cascade as the mushroom matures. The mellow, forest-like earthy flavor makes it a natural for hearty pastas, risottos, wild game and red meats. The caps are dark chocolate brown with a soft/silky texture. The creamy stems have a texture similar to asparagus. One way to cook pioppinos is by chopping them into fine pieces, stir-frying and adding them to your dish of choice.
