Bavarian Whole Seed is a coarse-grained mustard with a mild sweetness due to the liquids used for soaking the seeds and/or the added sugar or honey in the recipe.



Soak the mustard seeds in the beer overnight. The next day, place soaked seeds along with the remaining ingredients in a blender or food processor and blend until evenly mixed. If you prefer the seeds ground up finer, process further until it is the desired consistency. Store covered, in a cool, dark place until the flavor mellows somewhat or it may be used immediately if you prefer a more pungent flavor. Refrigerate when it reaches your desired pungency level.
