Sauces made with hot chili peppers are called hot sauces when in fact some may be considered marinades, basting or finishing sauces depending on how they are used. Anyone can make a sauce hot. Making a flavorful hot sauce requires the blending of many flavors that enhance the character of the chilie pepper being used. These flavors can come from herbs and spices, fruits, sugar and salt.
