
Anchos are dried poblanos, one of the sweetest of the dried chiles with a dark reddish brown color. It’s the most commonly used dried chile in Mexico and has fruit, coffee, licorice, tobacco and raisin flavors. A heat level of 3, it’s used in Moles, Mexican chili, sauces, soups and baked dishes.
