
Add 1 1/3 tsp per gallon prior to fining to lower total acidity by 0.1%. Cold stabilize for two weeks before racking off the tartrate precipitate. It is not recommended to reduce acidity by more than 0.3%, or to use on wines with a pH higher than 3.5.
