
Tartaric acid is used in cheese and wine making. It’s used to make mascarpone cheese at a rate of 1/4 teaspoon to 1 quart of cream. In wine making tartaric acid is used for making acid adjustments prior to fermentation and is the acid of choice for all wine adjustments. Consult a good winemaking textbook for usage amounts. One teaspoon = about 4 grams.
